Simple Creamy Potato and Leek Soup

I’m sure you are well aware that it’s officially soup season. While, of course, you can enjoy soup all year round, but something about soup during a chilly fall or winter day just paints a better picture.

I won’t bore you with a pointless introduction story on that one time, that probably didn’t even happen, when something monumental occurred while eating this soup. (Insert Sarcasm LOL) Can you tell I hate long, pointless, introductions on recipe blogs?

I’ll spare you the fake details and hop right into the recipe.

What I will tell you, quickly, is that potatoes and leeks are two of my favorite things – so this just seemed like a no brainer! Follow this recipe for the most delicious batch of Potato and Leek Soup, ever!

Ingredients: Feeds Six (One Hour Cooking Time)
  1. Three Slices of Cooked, Crispy Bacon
  2. One Bunch of Leeks
  3. Six Large White Potatoes (2lbs, peeled & chopped)
  4. One Quart Heavy Cream
  5. One Quart Chicken Stock (HOMEMADE IS THE BEST!)
  6. One Cup White Wine
  7. Two Cloves of Garlic
  8. Two Tablespoons Olive Oil
  9. Salt & White Pepper to Taste
Directions:
  1. Preheat broiler on high.
  2. Start by placing chopped leeks and garlic onto baking sheet drizzled with olive oil. Place baking sheet in broiler, on high, for four minutes. Flip contents on pan and return to broiler for another four minutes.
  3. While your leeks are roasting, reduce white wine, on stove, to about half.
  4. After your wine has reduced, add homemade chicken stock to pot and bring to a boil.
  5. Roasted leeks and garlic can be added as soon as they are finished in the broiler. (OMG I CAN SMELL THE KITCHEN NOW)
  6. Once boiling, add chopped potatoes to pot and cook until tender.
  7. Once tender, add heavy cream pot. (*puree if desired. Personally, I like my soup a little chunky)
  8. Add salt and pepper to taste.
  9. Top with chopped, crispy bacon.
  10. ENJOY!

There you have it, peeps. The most delicious and simplest Potato and Leek soup recipe you’ll ever come across. I love getting to share some of my favorite homemade recipes. Soup is one of the easiest, yet most flavorful dishes you can make. Personally, I prefer soup the next day – so the flavors have amble time to marinade. But, let’s be real, who wants to wait 24 hours to enjoy a dish that was made with effort, from scratch?
