Crockpot Apple Crisp Recipe

So as I am sure you are all WELL aware by now, I love all things fall, including apple picking. My sister, my friends, my cousins, and I have been on COUNTLESS apple picking trips to our favorite local orchard already this season. I also have been able to get a wide variety of different apples from the local farm stand right by my house. So yes, if you can picture my my boyfriend and I drowning in piles of apples in our apartment, then you have a pretty good idea of the number of apples we have on hand.

You may be asking yourself, what on earth can you do with all those apples?! Let me break it down for you… apple pie, apple cobbler, caramel apples, candy apples, apple cider, apple sauce, baked apples, apple butter, apple muffins, and… one of my personal favorites, APPLE CRISP!

Apple crisp is, in my opinion, one of the best fall desserts out there. The warm gooey apples mixed with the crunchy crumble – literal perfection. So today I decided to go ahead and share with you my tried and true apple crisp recipe. And do you want to know the best part? This is a crockpot recipe (hello minimal cleaning and your house smelling delicious all day long!)

Okay okay, enough of the lead up, let’s get into the apple crisp recipe:

What you’ll need:

For the topping:

  • 1 cup all purpose flour
  • 1/2 cup dark brown sugar
  • 1 cup uncooked whole oats
  • 1/2 cup white sugar
  • 1/4 Teaspoon nutmeg
  • 1/2 Teaspoon cinnamon
  • pinch of salt
  • 1/2 cup cold butter cut into pieces

For the corn starch mixture:

  • 1/3 cup sugar
  • 1 Tablespoon corn starch
  • 1/2 Teaspoon nutmeg
  • 1/2 Teaspoon cinnamon

Other Ingredients:

  • 8 medium sized apples peeled and cut into chunks
  • 2 Tablespoons lemon juice
  • 1 Teaspoon vanilla

What to do:

Step 1: Mix in the crockpot the apple chunks with the lemon juice and vanilla.

Step 2: Mix the flour, oatmeal, brown sugar, white sugar, cinnamon and nutmeg together in a large bowl. Add the butter pieces to the bowl and work them into the ingredients with a fork until you have coarse crumbs. Set the mixture aside. This will be the topping

Step 3: Whisk the white sugar, corn starch, nutmeg and cinnamon together in a medium size bowl. Stir the cornstarch mixture into the apples in the crock pot. 

Step 4: Sprinkle the topping mixture (made in step 2) over the apple chunks in the crock pot.

Step 5: Cook the apple crisp on high in the crock pot for 2 hours. Then remove the lid and continue to cook the apple crisp for 1 additional hour.

Step 6: ENJOY!!

Seriously, this is one of my absolute favorite fall desserts. My sister actually just made some this weekend and I am kicking myself for not getting a picture of this ooey-gooey deliciousness. Oh well, gives me an excuse to make it again!!
